José Luis Hinostroza
chef and restaurateur
Born in California to a Mexican family, raised in the farmlands that shaped his product-driven approach. He began his fine-dining career at Alinea (three Michelin stars) and went on to work at Maaemo, El Celler de Can Roca, and later became Chef de Cuisine at De Kromme Watergang (two Michelin stars). He then joined the R&D team at Noma and played a key role in Noma Mexico in Tulum.Back in Mexico, he co-founded ARCA in Tulum, the only venue in the world to appear simultaneously on The World’s 50 Best Restaurants, Latin America’s 50 Best, The World’s 50 Best Bars, and North America’s 50 Best Bars. He also founded Mestixa, recognized in the Michelin Guide, and in 2025 opened Mecenas Bar in Guadalajara and Mira Poolside in Valle de Guadalupe.He consults on food & beverage for Waldorf Astoria Hotels & Resorts, Xcaret Hotels, and Hotel El Ganzo, and is the founder of Atávica, a creative spirits brand. Across all his projects, he champions sustainability, regional ingredients, and a hands-on creative process that blends Mexico’s expressive soul with world-class technique.
